Chicken & Grilled Vegetable Salad Recipe

Grab the last of Indian Summer with this simple, healthy, and refreshing chicken and grilled vegetable salad that employs market veggies that are still in season. Their rich flavors are enhanced with light grilling, a side of protein-rich quinoa and chicken, and a light and tasty cumin vinaigrette.

Cumin Vinaigrette

Dijon Mustard

 

2 Tbl

Red wine Vinegar

 

3 Tbl

Honey

 

2 Tsp

Cumin Seed,-Toasted, Ground

 

2 Tbl

White Pepper

 

¼ Tsp

Salt Kosher

 

1 Tbl

Salad Oil

 

½ Cup

Place Cumin Seed into sauté pans and place pan on heat source and toast seed, tossing frequently, until seed become aromatic and begin to brown. Remove from heat, then grind. Combine all ingredients, except for oil, in a blender and blend. Slowly drizzle in oil until emulsified, adding water if needed to thin. Adjust seasonings, if necessary.

Marinate chicken breast for at least 4 hours in some cumin vinaigrette. Pre cook quinoa with your favorite summer flavors (we suggest cooking similar to rice but adding flavors that compliment the salad), then cool. Preheat outdoor charcoal grill. Slice tomatoes, pepper, and squash then toss with cumin vinaigrette. Quickly char vegetables on grill, remove, refrigerate. When vegetables are cool, dice, and place in bowl. Place cooked quinoa, greens in the bowl with the vegetables. Slowly cook chicken on grill, remove, and let rest for a few minutes. Toss the vegetables and greens with cumin vinaigrette, then slice or dice your chicken and place on top of the tossed salad.
